Chris Underwood

Chris Underwood is one of the most highly experienced and talented pastry chefs in the UK. He began his career at Cliveden Hotel in Berkshire and has worked ever since within multiple Michelin starred restaurants including: Pied à Terre, The Capital Hotel, The Grove, Gidleigh Park, L`Ortolan, La Becasse, The Langham Hotel, The Five Fields and The Typing Room.

It was whilst appointed Head Pastry Chef for Michelin starred Restaurant Tom Aikens in Chelsea where Chris was pushed to his limits creatively. One of his most prestigious positions to date was Head Pastry Chef of the Michelin starred Fera in Claridge’s Hotel. Chris then held a creative role as Group Pastry Chef for the Adam Handling Restaurant Group. During 2020 Chris developed all pâtisserie as Executive Pastry Chef at The Belmond Cadogan Hotel and overseeing Cadogans by Adam Handling & Adam Handling Chelsea Restaurant in London, winning the Best Contemporary Afternoon Tea in the UK in 2019 after just 6 months of opening,

Graham Garrett

Graham Garrett is known for his successful renowned restaurant The West House Restaurant with Rooms in Biddenden, Kent. The journey here was far from conventional.  His love was music, for a decade or so, a Rock ’n’ Roll drummer, touring and playing in large arenas during the ’80’s.

Graham swapped drum sticks for chef knives at 31 and rose through the culinary world working with the Nico Ladenis and Richard Corrigan. During this time it included cooking for the Queen and at 10 Downing Street.  

Since The West House was launched in 2002 the restaurant has gained far reaching acclaim, multiple awards and features in all the major guidebooks. Graham’s reputation has afforded him many media opportunities including, Great British Menu, Ramsay’s Best Restaurant and is also a regular on James Martin’s Saturday Morning.  He is also the author of the acclaimed autobiographical cookbook, ‘Sex & Drugs & Sausage Rolls’.

In addition, Graham’s consultancy has involved working with Eurostar, setting up entire restaurant concepts and menus; from street food, fried chicken and burger chains to gaining Michelin stars.  

Graham is still pushing and in 2022 sees the opening and joint venture in the heart of Tenterden , ârtisserie, with the highly acclaimed pastry chef Chris Underwood,

Creating breads and pastries all crafted in the patisserie on site pastry kitchen, with its transparent door offering locals and visitors an insight into the creations .
